Big Belly Breathing (BBB) is an audio program primarily for kids in English and French focusing on health and wellness, started by Vanessa Hutchinson-Szekely.

As a teacher, a parent of bilingual kids & a yoga instructor/social emotional learner facilitator and holistic health & wellness coach, Vanessa wants to encourage children to thrive through establishing daily health habits.

In this episode, we dive into “French Feasts & Cali Treats,” where we blend the rustic charm of French cuisine with the fresh, innovative spirit of California. As a French California mom, I can’t wait to share more personal stories, cherished family recipes, and tips on creating memorable meals that reflect the best of both worlds.


Today, we’re bringing a little French countryside magic to your kitchen with a classic roast chicken recipe. And, by countryside i mean the country of France as this is a classico dish for every national. 


This succulent dish, paired with potatoes and a big green salad, captures the essence of French comfort food. And of course, no meal is complete without a touch of California flair—so we’ll be adding a fresh twist that will make this feast truly special.

Yes, my friends, knowing how to bake a chicken is not just about making a meal; it’s about creating a culinary tradition, bringing framly together, and nourishing our loved ones with love and care.


Pourquoi c’est important? (Why it’s important?)


First, let’s talk about tradition. In France, Sunday lunch is or was often a grand family affair, and a beautifully roasted chicken is frequently the star of the show. It’s a dish that brings everyone together, creates memories, and instills a sense of continuity and tradition.


But it’s not just about tradition. Baking a chicken is also a versatile skill. With just a few basic ingredients, you can create a meal that is not only delicious but also healthy and economical. In California, where we love fresh, organic, and simple foods, a roasted chicken fits perfectly into our lifestyle.


The Benefits of Baked Chicken. Let’s break them down:


1. **Nutrition:** Chicken is a great source of lean protein, vitamins, and minerals. It’s a nutritious option for the whole family.

2. **Economy:** A whole chicken is often cheaper per pound than buying parts separately. Plus, you can use the leftovers for soups, salads, and sandwiches, maximizing your investment.

3. **Simplicity:** Baking a chicken requires minimal ingredients and effort. With just salt, pepper, some herbs, and maybe a touch of butter or olive oil, you can create a meal that’s as delicious as it is simple.

4. **Flavor:** The slow roasting process allows the chicken to develop deep, rich flavors that are hard to beat.


La Recette de la Maman: easy peasy- Vinaigrette Chicken

 It’s simple, flavorful, and always a hit.


**Ingredients:**

- 1 whole organic chicken

- salt (maldon)

- vinaigrette: mustard, Olive oil and apple cider vinegar


**Instructions:**

1. **Préparation:** Preheat your oven to 400°F . 


2. **Seasoning:** Salt your chicken HEAVILY. Coat it in Maldon, all around, as this will keep it moist and delicious


3. Vinaigrette: In a separate bowl, mix your vinaigrette and then slather it all over your chicken. 


3. **Roasting:** Place the chicken in a roasting pan, breast side up. Roast in the preheated oven for about 75 min, or until the internal temperature reaches 165°F (74°C). Baste occasionally with the juices from the pan. The chicken must be a beautiful golden brown to be ready.

4. **Resting:** Let the chicken rest for 10-15 minutes before carving. This allows the juices to redistribute, making the meat tender and juicy.


Bringing It All Together


Baking a chicken is more than just cooking; it’s about creating connections. When you bring a roasted chicken to the table, you’re not just serving food; you’re sharing love, tradition, and warmth.  So cheesy, so true!
